Hello,
I could set up a test machine here too, and install more and more of the same software as you until I can produce the problem. Do you think it is possible to get a demo version of that Symantec software?

Alternatively, it might be possible for me to work on it if you can give me RDP access to a test machine. But I would most likely need it for longer than just one or two days.

Symantec and Acronis do have trial versions and the Symantec version is for 60-90 days, so plenty of time. However they just released a 2013 version as of this week where we are using the 2010/2011 so it wouldn't be an "apples to apples" comparison.

If you have an FTP Tobias I can upload the 2010 and/or 2011 version trial to you. They are all trial versions then you buy a license to make them full, but as a trial they are fully functional. Let me know if I can help with this. If we PM each other for now we could perhaps share results on what we find together to see if Symantec is indeed causing the problem.

One possible cause that I found is if the service "Microsoft Software Shadow Copy Provider" is disabled, then this error will happen.

The service should be set to Automatic.

Ok, that was set to Manual, I have put it on Auto.

Aslo on Server 2008 R2 there is Volume Shadow Copy and the default is Manual, any relation here?

Yes that is also related, but some of them are OK being at manual, I am not totally sure. In any case, Automatic can never do any harm.
