Hello,
apparently the Destination Cache is not working correctly. Are you trying 4.97 or the latest beta version 5?

Exact Mirror is fine.

backing up the most Mac/HFS+ data and metadata as possible?

Version 5 copies all metadata, while version 4 only copied important metadata such as resource forks. See also http://www.superflexible.com/mac.htm.

Automatically Resume is a good idea. It means that interrupted transfers can be resumed later.

Always Append Smaller Destination Files should not be used except in rare situations (only for log files that are continuously appended but never changed in any other way).

The option Resource Forks and Finder Info should not be used when copying to afp or smb network drives! This stuff is automatically handled by Mac OS. This option is only necessary when you want to upload this metadata in separate "AppleDouble" files, for example via FTP.
